The festive season is just around the corner, with all those fattening food and drinks. However, you needn’t worry. We have some finger licking low fat Christmas recipes, so you do not miss out on the fun. You can now enjoy some delicious eatables without having to worry about the intake of additional calories.

Glazed Ham with Blackberry Sauce

Ingredients:

For Ham:

Dijon mustard                                                 2 tablespoon
Seedless blackberry jam                                  2/3 cup
Brown sugar                                                    1tablespoon
Black pepper (freshly ground)                        1 teaspoon
Smoked, trimmed bone in ham shank             1 (about 8 to 9 pounds)
Cooking spray

For Sauce:

Apple cider                                                     1 cup
Seedless blackberry jam                                  1 cup
Dry white wine                                               ½ cup
Dijon mustard                                                 1 tablespoon
Lemon juice (fresh)                                         1 tablespoon

Preparation:

Preheat the oven to 350 degrees. To prepare the ham, mix the mustard, sugar, pepper and 2/3 rd cup of the seedless blackberry jam in a bowl. Spread half of this mixture over the ham. Coat the broiler pan with cooking spray. Place the ham on the coated broiler pan. Then insert a thermometer into the thickest portion of the ham. Bake at 350 degrees for about two and a half hours or until the thermometer reads 160 degrees, occasionally basting the ham with the remaining jam mixture.

To prepare the sauce, mix the wine and the cider in a sauce pan. Bring it to a boil over medium heat. Stir in one tablespoon of mustard with one cup of jam. Bring the heat down to low and keep cooking and stirring frequently until the jam dissolves. Remove from heat and then stir in the juice. Finally serve with the ham.

Chocolate-Cinnamon Bread Pudding with Raspberry Sauce

Ingredients:

Ground cinnamon                                           ¾ teaspoon
Sugar                                                               1 cup
Vanilla extract                                                 1 teaspoon
Eggs                                                                2
Egg whites                                                      2
1% low fat milk                                              2 ¼ cups
Salt                                                                  ¼ teaspoon
Cubed (1/2 inch) multigrain bread                  6 cups
Frozen raspberries in light syrup                     1 10 ounce package
Coarsely chopped semi-sweet chocolate        1/3 cup

Preparation:

Preheat the oven to 375 degrees. Coat the 2 quart baking dish with cooking spray. Mix the sugar with the cinnamon in a large bowl. Add the eggs whites, eggs, salt and vanilla and stir well.  Gradually stir in the milk. Add the chocolate and the bread cubes and stir well. Let it stand for 5 minutes. Transfer this mixture to the baking dish. Let it bake for 50 to 55 minutes till it is puffed. Then let it stand for about 10 minutes. While the pudding bakes, puree the thawed raspberries with the syrup in the food processor. Transfer the mixture into a strainer placed over the bowl. Press the solids with a spoon and discard the seeds. Spoon one eighth of the pudding into dessert bowls. Serve it with the raspberry sauce.

Blueberry and Zucchini Bread

Ingredients:

Zucchini, shredded – 2 cups

White sugar – 1 1/4 cup

Eggs, lightly beaten – 3 pieces

All purpose flour – 3 cups

Baking powder – 1/2  teaspoon

Baking soda – 1/4 teaspoon

Cinnamon powder – 1 tablespoon

Fresh blueberries – 1 pint

Preheat the oven to 350 degrees Fahrenheit. Then, prepare four loaf pans by greasing each lightly. Mix in a bowl the sugar, vanilla, eggs and oil. Whisk them well before adding in the zucchini. Next, stir in the nutmeg, cinnamon, flour, baking soda, salt and baking powder. Toss in the fresh blueberries while blending the mixture thoroughly. Afterward, pour the batter in the loaf pans and bake the bread for about 50 minutes.

Blueberry Lemon Bread

The zesty taste of lemon combines perfectly with the delightful texture and aroma of blueberries in this fabulous bread recipe.

Ingredients

Lemon rind, grated – 2 tablespoons

Fresh blueberries – 1 cup

White sugar – 1 cup

All purpose flour – 1 1/2 cups

Softened butter – 1/3 cup

Eggs – 2 pieces

Baking powder – 1 teaspoon

Whole milk – 1/2 cup

Preheat the oven to 350 degrees Fahrenheit. Apply butter to grease the baking pan. Then, coat the blueberries in flour. Cream the sugar and butter in a mixing bowl before stirring in an egg at a time. Whisk the mixture in each addition of egg. Toss in the lemon rind.

Meanwhile, combine the baking powder, flour and salt in another bowl. Stir in the egg and flour mixture alternately. Next, fold in the fresh blueberries. Place the batter in the baking pan. Then, bake the bread for 60 minutes or until the bread is set.

Last night I made this delicious berry tart and here is the berry tart recipe.  What is so great about this dessert is that it is quick and easy to make and the fact that it is a vegan dessert shouldn’t scare you a bit.  No one new it was vegan until I spilled the beans after everyone finished their second serving! Can it get any better, healthier or more delicious?

Here is the berry tart recipe.  To keep it a vegan dessert, use non-hydrogenated margarine instead of butter.

Ingredients for the berry tart crust:

1/2 cup non-hydrogenated margarine

1/3 cup sugar

1 teaspoon vanilla for the crust

3/4 cup finely chopped pecans

1 1/2 cups flour

Preheat the oven to 350 degrees Fahrenheit.  Beat the sugar and margarine until creamy and well mixed.  Add the vanilla and mix again.  Then add the pecans and continue mixing the batter until smooth and creamy.  Add the flour 1/2 a cup at a time.  Note, crust batter will become very crumbly.

Coat the tart pan with some margarine and then press the crust dough into the pan using your fingers.  Make sure to get the sides of the tart pan as well as the bottom and that your crust is even throughout.  You may find you have some left-over dough, no worries, just make a mini-tart for yourself!

Bake the tart crust until golden, about 25 to 30 minutes.  Take the crust out of the oven and make sure to cool the pan completely. (I let my crust sit for about 5 hours to ensure it was ready for the berry filling.)

Berry tart filling:

1 pound of mixed berries (I used blackberries, blueberries strawberries and raspberries)

1/4 cup sugar

1 to 2 tablespoons of flour

1/8 to 1/4 cup crushed raspberries with 2 tablespoons of sugar

In a large bowl, mix the berries and the 1/4 cup sugar until well blended.  Then add the flour and mix until well-coated.  Transfer the fruit mixture and bake the berry tart in a preheated oven at 350 degrees Fahrenheit until warm about 15 minutes.

In the meantime, take your extra 1/8 to 1/4 cup crushed raspberries with the 2 tablespoons of sugar and heat the mixture on the stove top until warm and bubbly.  About 2-3 minutes.  Then, once the tart has been baking for 15 minutes, open the oven door, pull the oven rack with the tart out of the oven and carefully pour the raspberry sauce evenly on top of the tart.

Put the tart back in the oven and bake for another 5 minutes or so.  Carefully, remove this wonderful vegan dessert out of the oven and allow to cool before serving.  Remove tart pan before serving.
