How to prepare recipe for Jam Filled Crepes? They are surprisingly easy to make once the pan reaches the right temperature. “Palacsinta” is the Hungarian name for jam filled crepes. Berry jams are especially tasty, but I also like to use apricot preserves. Dusted with powdered sugar, these little gems are sure to please the kids. This recipe makes about 6 servings. Here are ingredients and simple directions. Follow them very carefully:
RECIPE FOR JAM FILLED CREPES
INGREDIENTS :
2/3 cup sifted Sorghum Blend (Ingredients: 1½ cups sorghum flour 35%, 1½ cups potato starch/cornstarch 35%, 1 cup tapioca flour 30%. Directions: Whisk the ingredients together until well blended. Store, tightly covered, in a dark, dry place. You may refrigerate or freeze the blend, but bring to room temperature before using. Makes 4 cups. You may double or triple the recipe.)
¼ teaspoon xanthan gum
1⁄8 teaspoon salt
1 cup 1% milk (cow’s, rice, soy, potato, or nut)
2 large eggs, at room temperature
6 teaspoons unsalted butter, buttery spread or canola oil
1 teaspoon almond extract
¾ cup raspberry or strawberry or blackberry jam
¼ cup powdered sugar for dusting
DIRECTIONS :
Combine the sorghum blend, xanthan gum, salt, milk, eggs, 2 teaspoons of the butter, and almond extract in a blender and process until very smooth. Transfer to a large glass jar or container and refrigerate at least 30 minutes.
Heat an 8-inch nonstick skillet or seasoned crepe pan over medium-high heat until a drop of water dances on the surface. Add enough of the remaining 4 teaspoons butter (about ½ teaspoon per crepe) to lightly coat the skillet, adding more as necessary to fry all 12 crepes.
Pour a scant 2 tablespoons batter into the crepe pan and immediately tilt pan to coat the bottom evenly. Cook until the underside of the crepe is brown; cook other side for about 20 to 30 seconds until it is also lightly browned. Fry another 7 crepes using the remaining batter and butter. Stack the crepes with layers of parchment paper or aluminum foil between them.
Spread a tablespoon of jam over each crepe and roll up, jelly-roll style. Or, fill the crepe with jam and then fold in half, then in half again. Serve immediately, dusted with powdered sugar.
Follow the simple directions very carefully. Lots of fun preparing this recipe and Bon Apetit.

What are Blueberries?
Blueberries are tasty and delicious little blue fruits that can grow wild or be cultivated. Blueberries are actually one of the few fruits that are native to North America. They have been used for many years by Native Americans either fresh or dried. Blueberries are a delicious summer time treat with many versatile uses. The sweet blue gems can be eaten raw or baked in pies, cakes or other desserts. Blueberries also taste great in pancakes, muffins and yogurt. When dried, blueberries taste wonderful in soups and stews. They can also be crushed into a powder to make a rub perfect for flavoring meats.
Facts About Blueberries
Blueberries are mostly grown in the United States and Canada. When ripe they are dark in color with a thin, smooth outer skin. They have tiny seed in side of the fruit, but these are perfectly safe to eat and do not need to be removed. There are many different varieties of blueberries and they all differ slightly in taste, size and texture.
Blueberries can grow on low bushes or in fields. They are harvested by picking the berries off of the bushes or by raking the fields. Wild blueberries can be found throughout much of the Eastern United States and Canada. The wild blueberries are much smaller and sweeter than their cultivated cousins.
The blueberry is the second most popular fruit in the United States and is the state fruit of New Jersey. Every year more than 200 million pounds of blueberries are grown in North America. That would cover a four lane stretch of highway all the way from New York to Chicago. Blueberries are very popular and more and more products are being introduced to the market each year that contain blueberries.
Blueberries are related to the flowers azaleas, camellias, heathers and rhododendron. Blueberries must be allowed to ripen on the bushes. Unlike other fruits, once blueberries are picked they will not continue to ripen.
When selecting blueberries look for fruits that are firm and completely blue. There should not be any red or white on the berries. Blueberries should be kept in an open container in the refrigerator. Blueberries are very perishable and should not be washed until they are ready to be eaten. If picked fresh and stored properly they should last about two weeks.
Blueberries freeze beautifully and easily retain their color and flavor. Blueberries can also be canned whole to preserve them or made into delicious jellies or jams.
Blueberry Health Benefits
Blueberries are very nutritious. One cup of the sweet fruit contains only eighty calories and has five grams of fiber. Blueberries are also high in Vitamin C and are full of disease fighting antioxidants.
The antioxidants that are found in blueberries are said to help reduce heart disease and cancer. They also may reduce the number of occurrences of urinary tract infections. The blueberry also contains high levels of anthocyanins which help to slow the aging process, protect the heart and prevent mental decline.
The best way to get the most nutritional value out of eating blueberries is to eat them whole and raw. This is because the concentration of the seeds inside the blueberry contains a number of polyphenols which have cancer preventative properties. Blueberries also contain salicylic acid which is used to make aspirin. For this reason blueberries can also prevent heart attacks and reduce the amount of swelling and inflammation in the blood vessels.
The Nutritional Benefits of Blueberrie
The nutritional benefits of blueberries does not end with helping to fight cancer. Blueberries also can help to lower cholesterol levels and help with abdominal problems. A diet high in fruits and vegetables is a sure way to shed unwanted pounds and maintain a healthy weight, so blueberries can also help to prevent unwanted weight gain. Blueberries are high in fiber which helps with digestive health and keeps people feeling fuller for longer which should reduce the amount of snacking and mindless eating.

Most of us are looking for ways to get our kids to eat better these days. One of the biggest problems in America, and to some extent in other parts of the world, is obesity. Children everywhere are becoming terribly overweight as they snack constantly on goodies that do nothing but harm to them. So many companies today market specifically to little kids. They know that they can easily get young people addicted to some sort of junk food. Kids don’t think about their health and many of them do not know that eating certain things is bad for them. They don’t know that just another cheeseburger could mean serious problems for them down the line. How can you as a concerned parent fight these huge corporations to protect your children’s health? Obviously you cannot afford the time or the energy to try to change things legally, and companies do have the right to market their products.
The real solution to the problem is to introduce your kids to some snacks that are genuinely healthy.
You also need to find something that can be made quickly and easily. You need to find something that you do not need to make yourself and that your kids can make safely. But what food will kids like that is actually good for them? Can you get them past the fast food generation?
There are only a few things that I have found that my kids really love instead of hamburgers. The best stuff you can get them to eat is fruit. Fruit contains many of the vitamins and minerals that kids need and it does not have the types of saturated fats and preservatives in so much of our junk food. Here are five fruity snacks that kids love:
1. Exotic fruit mix. Cut up strawberries and kiwis.
Mix them together and put them into a bowl. You don’t need to add anything else to get kids to come. These fruits are already naturally so sweet that they will taste like candy. They are also so fresh that they provide a nice break from much of the processed and frozen food in the average diet.
2. Apples. You will be surprised to find that kids love apple slices. Sometimes if you give them a little cheese to eat with the apple bits you will find that they especially love it. Use either reds or greens and try different varieties. You will find that kids are less likely to eat sharp tasting fruits, such as crisp red delicious.
3. Oranges. These are great because they provide lots of minerals needed by growing young bodies. You will find that young people love a few little orange slices here and there. You can get them most of the citrus they need.
4. Pineapple. I recommend a bowl of pineapple now and then. This is partly because it is so unusual. Pineapple does not taste like anything else which is largely why kids like it.
5. Berries. Although not something you should probably allow your kids to eat too much of, berries can make for a great little hand held snack like candy.
These are just the sorts of snacks that your kids will start to expect to have when you introduce them to them. You will be surprised to see just how much they like having fruit. They will forget about all that nasty fast food fairly quickly. You will also see a general improvement in their health and weight. A few fruity snacks everyday definitely keeps the doctor away.
